A QUIRKY HEALTHY SALAD
How many times have you looked at a recipe or menu and seen ingredients that you think should never go together, well this is one of them. A friend of mine got me started by adding garbanzo beans, kidney beans or cantaloupe to Caesar salad. She is a very good cook, so I tried it and I liked it. The beans add a good source of protein as well as color to the salad. Cantaloupe adds a different layer of flavor as well as color. Besides everyone eats Caesar salad with chicken or shrimp. So here is another salad with an odd twist and I really think you will enjoy this for a pleasant change. If you can not find the fat free versions of the dressing use their regular equivalents.

2 ripe pears, diced 1 can red kidney beans, drained and rinsed 1 head or bag of Romaine lettuce, torn into bite size pieces
1/4 -1/2 cup sliced almonds Fat Free Balsamic Vinaigrette Dressing Fat Free Poppy Seed Dressing
Place lettuce in a salad bowl, add beans and pears. For salad dressing mix 1/3 bottle of Balsamic Vinaigrette and 2/3 bottle of Poppy Seed dressing together. Pour over salad and toss, coating well. Sprinkle with almonds . Serve immediately.
